Peppery Greens With Watermelon

Ingredients

  • Servings: 2
  • 1 cup seedless watermelon, cubed
  • 2 ounces reduced-fat feta cheese, crumbled
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon black pepper, freshly grated
  • 1 tablespoon extra virgin olive oil
  • 2 cups arugula or 2 cups mixed greens
  • salt
  • 2 tablespoons toasted almonds, chopped

Recipe

  • 1 in a medium bowl, put watermelon, cheese, vinegar and pepper. marinate in the refrigerator for 15 minutes.
