Shallot Vinaigrette

Ingredients

  • Servings: 8
  • 1/2 cup cider vinegar
  • 1 tablespoon shallot, finely chopped
  • 1 teaspoon dijon mustard
  • 1 teaspoon sugar
  • salt & freshly ground black pepper, to taste
  • 1/2 cup extra virgin olive oil

Recipe

  • 1 whisk vinegar, shallot, mustard, sugar, salt and pepper together in a small bowl.
  • 2 slowly drizzle in the olive oil, whisking constantly until thickened.
  • 3 store covered in the refrigerator for up to 2 days.
  • 4 bring to room temperature before serving.
