Ingredients

- 1/2 cup cider vinegar
- 1 tablespoon shallot, finely chopped
- 1 teaspoon dijon mustard
- 1 teaspoon sugar
- salt & freshly ground black pepper, to taste
- 1/2 cup extra virgin olive oil
Recipe
- 1 whisk vinegar, shallot, mustard, sugar, salt and pepper together in a small bowl.
- 2 slowly drizzle in the olive oil, whisking constantly until thickened.
- 3 store covered in the refrigerator for up to 2 days.
- 4 bring to room temperature before serving.
