Royal Thai Siam Forest Salad

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 head lettuce, torn
  • 1 cucumber, peeled, sliced
  • 1/2 cup carrot, grated
  • 2 tomatoes, sliced
  • 1 onion, thinly sliced
  • 4 eggs, hard boiled
  • 1 cup bean sprouts
  • 2 tablespoons oil
  • 2 tablespoons peanut butter
  • 2 tablespoons red curry paste
  • 1 teaspoon chili powder
  • 1/2 cup peanuts, ground fine
  • 1 tablespoon sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 2 cups coconut milk
  • 1/2 cup shallot, deep fried, could use french fried onions here

Recipe

  • 1 fry oil curry.
  • 2 chili powder.
  • 3 add finely chopped peanuts.
  • 4 add peanut butter.
  • 5 add sugar add lemon juice salt.
  • 6 coconut milk.
  • 7 shallot.
  • 8 bring to a boil.
  • 9 gently until oil rises.
  • 10 put in serving bowl.
  • 11 salad.
  • 12 lettuce on bottom.
  • 13 cucumber center.
  • 14 tomatoes either side next eggs.
  • 15 bean sprouts either side.
  • 16 carrot either side.
  • 17 onion 4 corners.
