Royal Thai Siam Forest Salad

Ingredients

- 1 head lettuce, torn
- 1 cucumber, peeled, sliced
- 1/2 cup carrot, grated
- 2 tomatoes, sliced
- 1 onion, thinly sliced
- 4 eggs, hard boiled
- 1 cup bean sprouts
- 2 tablespoons oil
- 2 tablespoons peanut butter
- 2 tablespoons red curry paste
- 1 teaspoon chili powder
- 1/2 cup peanuts, ground fine
- 1 tablespoon sugar
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 2 cups coconut milk
- 1/2 cup shallot, deep fried, could use french fried onions here
Recipe
- 1 fry oil curry.
- 2 chili powder.
- 3 add finely chopped peanuts.
- 4 add peanut butter.
- 5 add sugar add lemon juice salt.
- 6 coconut milk.
- 7 shallot.
- 8 bring to a boil.
- 9 gently until oil rises.
- 10 put in serving bowl.
- 11 salad.
- 12 lettuce on bottom.
- 13 cucumber center.
- 14 tomatoes either side next eggs.
- 15 bean sprouts either side.
- 16 carrot either side.
- 17 onion 4 corners.
