Raw Corn And Heirloom Tomato Salad

Ingredients

  • Servings: 4
  • 4 ears sweet corn, kernels cut off the cob
  • 1 large ripe heirloom tomato, cored and medium diced
  • 8 ounces fresh torn spinach or 8 ounces baby spinach
  • 2 shallots, minced
  • 12 basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • salt and pepper

Recipe

  • 1 combine all ingredients and let sit for 15 minutes to marry.
  • 2 serve on a chilled plate.
