Portabella & Goat Cheese Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 portabella mushrooms
  • 1/2 cup balsamic vinaigrette, plus extra for dressing each salad
  • 4 ounces goat cheese
  • 4 sun-dried tomatoes packed in oil, diced
  • spinach

Recipe

  • 1 marinate mushrooms in balsamic vinaigrette for about 30 minutes.
  • 2 grill mushrooms over medium heat in a skillet until tender.
  • 3 slice mushrooms into strips and serve over spinach, which will wilt some of the spinach.
  • 4 top with goat cheese and diced sundried tomatoes.
  • 5 drizzle extra balsamic vinaigrette over salad.
