Spring Beet Salad With Walnuts

Ingredients

  • Servings: 6
  • 1 lb fresh beet, cooked
  • 1/2 cup walnuts, finely chopped
  • 1 tablespoon horseradish
  • 1/2 cup sour cream (or plain joghurt)
  • 1 tablespoon mayonnaise
  • 1/4 cup half-and-half cream
  • 1/3 cup orange juice
  • salt and pepper
  • 2 tablespoons chopped parsley (to garnish)

Recipe

  • 1 peel and dice beets.
  • 2 add walnuts.
  • 3 combine dressing ingredients and add to beets.
  • 4 garnish with parsley.
