Ingredients
- Servings: 6
- 500 g eggplants
- 1 onion, finely chopped
- 1 green pepper, finely chopped
- 200 g mayonnaise
Recipe
- 1 wash the eggplants, prick them with a fork and squeeze them out.
- 2 bake them in a hot oven until they're soft.
- 3 remove seeds and peel of the eggplant and puree it.
- 4 mix with the onion, the pepper and the mayonnaise.
- 5 serve chilled.
