Melitzanosalata

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 500 g eggplants
  • 1 onion, finely chopped
  • 1 green pepper, finely chopped
  • 200 g mayonnaise

Recipe

  • 1 wash the eggplants, prick them with a fork and squeeze them out.
  • 2 bake them in a hot oven until they're soft.
  • 3 remove seeds and peel of the eggplant and puree it.
  • 4 mix with the onion, the pepper and the mayonnaise.
  • 5 serve chilled.
