Spicy Moroccan Salad

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 red onion
  • 1 tablespoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne
  • 2 tablespoons olive oil
  • 8 -10 carrots
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/4 cup fresh mint

Recipe

  • 1 saute thinly sliced red onion with cumin, paprika, salt, pepper and cayenne in 2 tbsp olive oil about 5 minutes.
  • 2 add julienned carrots and 1/2 cup water, stir often on medium high heat until tender crisp and water is evaporated.
  • 3 whisk lemon juice with 2 tbsp olive and honey.
  • 4 toss with carrots.
  • 5 sprinkle with chopped fresh mint.
  • 6 serve warm or at room temperature.
