Potato Olive Salad

Ingredients

- 6 small new potatoes
- salt
- 1 green onion, finely chopped
- 1/4 cup sliced pimento stuffed olive
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1/2 tablespoon red wine vinegar
Recipe
- 1 cook potatoes in boiling salted water to cover for 30 minutes or until tender.
- 2 drain well.
- 3 slice 1/4-inch thick or dice.
- 4 place in a salad bowl.
- 5 add green onion and olives.
- 6 stir the pepper, oil and vinegar together in a small bowl.
- 7 pour over the potatoes and toss to mix.
