Potato Olive Salad

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 6 small new potatoes
  • salt
  • 1 green onion, finely chopped
  • 1/4 cup sliced pimento stuffed olive
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/2 tablespoon red wine vinegar

Recipe

  • 1 cook potatoes in boiling salted water to cover for 30 minutes or until tender.
  • 2 drain well.
  • 3 slice 1/4-inch thick or dice.
  • 4 place in a salad bowl.
  • 5 add green onion and olives.
  • 6 stir the pepper, oil and vinegar together in a small bowl.
