Mixed Bean Salad

Ingredients

  • Servings: 12
  • 14 ounces green beans, cut
  • 14 ounces yellow beans, cut
  • 19 ounces red kidney beans
  • 19 ounces chickpeas
  • 1 cup celery, chopped
  • 1/2 cup red onion, chopped
  • 1/2 cup green pepper, chopped
  • 1/4 cup sugar
  • 2/3 cup wine vinegar
  • 1/3 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 teaspoon dried dill weed

Recipe

  • 1 drain beans and rinse with cold water.
  • 2 combine in a large bowl and add celery, onion, and green pepper. combine all dressing ingredients and whisk well.
  • 3 pour over vegetables, mix well, taste and adjust seasonings, if necessary.
  • 4 refrigerate before servings.
  • 5 will keep several days in the refrigerator.
